how to write a simple Windows Service using SDK?

While it's pretty easy to write a Service using Visual Studio,
- I am wondering if we can do it using SDK only?
- Is there some sort of documentation how to do it, like samples?

Sure

The SDK QuickStart contains a sample. Look under "Services" at
http://samples.gotdotnet.com/quickstart/howto/
