I am aware how to divert incoming email from particular sources to designated
folders using the 'create a rule' procedure. However, is it possible to have
emails I send to particular people, go to specific folders and not all go to
the default 'sent' folder?

Maybe.  The first step in figuring it out would be to find a newsgroup  
related to using Outlook.
